Third kimchi experiment:
Cucumber kimchi!!!

Ingredients:
8~10 baby cucumbers
5 cups water
Half cup coarse sea salt

1 baby carrot
2 spring onions

4 cups red pepper powder
1~2 Tbsp Fish Sauce
1~2 Tbsp Water (Optional)
1 Tbsp Sugar
1 Tbsp Minced Garlic
1tsp Minced Ginger

Cut into short pieces (either bite-size or finger-size, up to you) cut a Cross through the cucumber, but not all the way through!! (it's for stuffing later) |
Boil 5 Cups of water plus 1 cup of coarse salt. When boiled, off fire. Put in cucumbers and soak for 50 mins. (Here you can see how the cucumbers are cut with "crosses" more clearly) |
Cut the spring onions and baby carrots. Minced the garlic and ginger. |
Just for intro, this is Fish Sauce~ For vegetarian, can substitute this with soy sauce. |
Mix red pepper powder, sugar, fish sauce, water (optional), minced garlic and ginger. After mix well, add in carrot and spring onion, and mix again. |
After soaking in the hot salted water for 50 mins, rinse the cucumbers with cold water (~3 times). After which, stuff in the mixture :) Try to make all surface with the sauce~ |
And Ta-Da!!! Done!!! Put in container, into the fridge, and wait~~~~ |
